Orange Almond Biscotti

My daughter-in-law Nikki gave me this easy recipe she got from Karen on You can make substitutions, additions and many variations!
Ingredients: 2 1/4 cups all-purpose flour 1 1/4 white sugar 1 pinch salt 2 tsp baking powder 1/2 cup sliced almonds 1 tbsp orange zest 3 eggs beaten 1 tblsp vegetable oil 1/4 tsp almond extract
1. Preheat oven to 350°F (175° C) Grease and flour baking sheet 2. In a large bowl stir together dry ingredients. Make a well in middle and add the rest. Mix until ball forms. 3. Seperate in half and roll into log about 8 inches long. Flatten to 3/4 inch thick. Bake for 20-25 minutes. Cool slightly and slice diagonally in 1/2 inch sections. Set them on thier side and bake an additional 10-15 minutes, turning after about 5 min. Finished cookies should be crunchy.
To cover the bottom with chocolate melt a chocolate bar, cover and let cool.
To melt the chocolate put water in a pan and put a smaller one in it to make a double boiler to hold the chocolate.



So far they have been a big hit at gatherings. My friends and even Sir Lancelot, my Yorkie, found them to be delicious. I baked them at the minimum times so my older friends could eat them more easily.
